In a few short years, yerba mate (Ilex paraguariensis) went from a South American ritual to bags, cans, gourds, and bombillas stacked on shelves worldwide — and brought thousands of first-time drinkers with it. What it didn't bring was clarity: bags that won't say whether they're con palo or sin palo, smoked or air-dried, coarse or powdery, or where the leaf even grew.
So that's the job. For every blend we rank, we brew a proper round and taste it on the three things you can actually compare: stems (con palo vs sin palo), smoke (smoked vs air-dried), and strength. We note the cut and the origin — Argentine, Uruguayan, or Paraguayan — because a number on a bag can't tell you how a mate drinks. Then we rank, using a methodology we publish in full.
